Three reference points

Rare sears the surface and leaves the centre strongly red. Medium leaves a hint of red at the centre, balancing juices and cooking. Well done cooks through to the middle.

If you are unsure with wagyu

If you want the sweetness of the fat, less heat shows it more clearly. If rich fat feels heavy to you, cooking further makes it easier to eat.

Why we use an iron plate

Dishes arrive on a heated iron plate, so they keep cooking a little at the table. Finishing just short of your target is one way to work with that. If you are unsure, simply ask our staff.
