和牛と神戸牛の、ステーキとハンバーグの専門店です。

一

和牛は、品種の名前です。

黒毛和種、褐毛和種、日本短角種、無角和種。この4品種とその交雑種だけが「和牛」と呼べます。日本で育った牛を指す「国産牛」とは別の言葉で、品種そのものを表します。但馬牛も神戸ビーフも、黒毛和種です。

神戸ビーフは、但馬牛の中から選ばれます。

兵庫県内の但馬牛の血統だけで交配し、兵庫県内の指定生産者が育て、兵庫県内の指定食肉センターで処理する。そのうえで脂肪交雑や枝肉重量の基準を満たしたものだけが神戸ビーフになります。年間に但馬牛と認定されるのが約7,500頭、そのうち神戸ビーフは約7,000頭。日本の牛肉流通量の0.2％未満です。

認定された枝肉には4か所に判が押され、一頭ごとに『神戸肉之証』が交付されます。写真に写っている判が、それです。

細かいサシは、但馬牛の体質です。

但馬牛は筋繊維が細かく、そのぶんサシも細かく入ります。生後30〜32か月、一般の黒毛和牛より2〜4か月長く育てられます。枝肉は499.9kgを超えてはいけません。大きくなりすぎると、但馬牛らしいキメの細かさが失われるからです。

鉄板で焼いて、そのまま。

鉄板で焼き上げ、熱いままお出しします。鉄板のメニューには、ライスまたはバゲットが付きます。

The ambiance was nice, with comfy seats and a nice view of the zen garden. We were directly seated, and served drinks. The service there is amazing, and efficient. I have to be honest though, the menu didn’t have a very large variety of meals: there were only 3 different set-menus. Either way, they were all delicious. The most memorable part of our meal was when they served us raw meat. The waiter explained to us that we were supposed to cook the meat ourselves on a conveniently placed grill! This was a fun surprise, as we were able to use this moment to bond together as a family. My favorite cut of meat was the diced sirloin, a piece everyone should try. The end of the meal opened the doors to a variety of desserts, all of which were delicious. 2 quick notes before entering the restaurant:

1. Make sure you take enough time from your schedule to make room for the meal because it took us around 2 hours to finish off.

2. Be prepared to take off your shoes upon entering the restaurant.

Overall, I give the restaurant a well-earned 4.8

We didn't see the entire shrine so we went back after the ninja tour and ate here first. It is underground and we were the only customers during lunch. Great location! We stopped here after shopping the markets and the mall. The food and service are terrific! Atmosphere is really nice for couples but friendly enough for family dining. Had the Wagu beef and Kobe beef hamburger steak specials. Great prices for a very tasty meal. Everything was cooked to perfection and meat full of flavor, melting in mouth as expected. Definitely recommend for a great, hearty, flavorful meal after a full day of shopping! But do save room for dessert, too!

This place has the vibes. The place is located on the 8th floor. The steak was awesome and it's priced right...not that expensive. Atmosphere was so pleasant and relaxing. The staff were all great. Highly recommend if you are here beside Nishiki Market

I took the family to this restaurant and, admittedly, I was a bit skeptical at first. From an American point of view, the place itself seemed quite unassuming—it’s located on the top floor of a shopping mall and has a very simple, no-frills layout. But that initial impression quickly changed once the food arrived. I ordered two 180g Kobe sirloin steaks—about 6 ounces each—and they were outstanding. Incredibly tender, buttery, and rich, the kind of steak that practically melts in your mouth. The food presentation was excellent, and the steaks were served on a sizzling cast-iron plate. That black disk that resembles a hockey puck is actually a heated stone, which allows you to re-sear your steak to your preferred level of doneness. It’s a nice touch. Personally, I would have liked a bit more seasoning—specifically salt—but salt was provided at the table. Given that many people today are salt-sensitive, I understand why the restaurant takes a more neutral approach to seasoning. My son and I also ordered the corn soup, which was creamy, flavorful, and served piping hot. The accompanying baguette was crusty on the outside and came with butter. It’s a great option if you’re not in the mood for rice, which isn’t pictured here but was also available.
